Tired of the same cookbooks at home, I was on the hunt for something new. Something good. I wanted a cookbook that would have MANY recipes worth using.
Two things drew my attention to my newest cookbook:
1. Scrumptious looking southern food!
2. Trisha (cookbook author & food network star) saying, “I have adopted an 80/20 rule: 80 percent of the time I make good choices; 20 percent of the time I let myself splurge a little.”
Flipping through the cookbook pages I found at least 6 recipes that I wanted to make immediately. Like, right now. The other recipes looked really yummy too. This cookbook was going to get a workout in my kitchen – I knew that for sure!
The cookbook has the following categories:
My first recipe to test out had to be the chili cornbread casserole.
The picture drew me in but the ease of the recipe committed me to doing this one first! Essentially you create the chili as the foundation and add the cornbread (mix) to the top. One recommendation I have is to use 2 boxes (not 1) of the Jiffy cornbread for the topping. One box barely covered a quarter of the chili base and 2 boxes made an overall thin topping. And honestly, I could have used 3 boxes if I wanted it to look more like the picture.
The next recipes I want to make from this cookbook include:
Angel Hair Pasta with Avocado Pesto
Breakfast burrito
Granola parfait
Cinnamon rolls

A good picture in a cookbook makes all the difference!! This recipe looks yummy. We are always interested in trying new recipes at our house. I’m sure this cookbook has some good southern food!

I love the 80/20 rule! If you eat 3x a day that is 4 meals a week and THAT is a lot of GOODNESS! I just made chili the other day so I am going to check this one out see if I can add anything to my recipe! 🙂
