So, it’s not every day that you get to test out recipes for a major chef. In fact, not sure when this amazing opportunity ever happens. But it did. For me. And I got to test out two recipes for the incredibly talented and well-known famous chef Douglas Katz. #PinchMe
You know Chef Katz from his restaurant, Fire, at Square in Cleveland. Silly to not have a reservation here because its always filled with happy (and hungry) individuals. The homemade cinnamon rolls and the homemade pickles are among my favorites. Remember how I raved about this restaurant here? You also know Chef Katz from the Katz Club Diner and his partnership at Provenance at the Cleveland Museum of Art. Now you will know him for the Fire Spice Company.
Fire Spice Company creates (aka grinds and prepares in house) a variety of handcrafted spice mixes and recipes to accompany those spices. I cook almost daily but have no clue how to use spices properly. If you’re like me, this new feature from Chef Katz is a dream come true. I was one of several testers for the Fire Spice Company‘s spices before they hit the public. Based on the brrrrrr cold Cleveland weather, I opted for the chili spices (no brainer) and the mulled spices for a delicious batch of mulled wine. Want to join?
Simply by adding the spice kit, some orange zest and wine to a pot, I was able to create the most smooth and delicious mulled wine in only one hour!
While the wine was mulling on the stove, I was able to start the chili. With easy to follow directions along with the chili seasonings packet and a basic chili ingredients list for the grocery store, I was ready to begin!
Prep time took about an hour to get ready and the cooking/simmering of the meal took about another hour. Overall, the quickest and BEST tasting chili we’ve ever had. My husband was blown away!
I am SO excited for these seasoning packets to be open for the public (which happens so soon!) and ready to purchase! From what I’ve seen by testing out two of these seasoning packets, I am SOLD. Can’t wait to try out the other seasonings and the recipes that accompany them. I’m really curious about the shrimp and chicken recipes! I bet they are equally as yummy! How cool is that?! Anything to make my life easier, and I’m with you, when it comes to spices I always draw a blank and tend to use the same ones over and over, and that’s if a recipe calls for it!

Yum! I’m making the spice cake this weekend! Just had dinner at Fire last weekend. It’s been one of our favorite spots in Cleveland for years. I’m thrilled Doug is beginning this new venture. Can’t wait to try the chili.

I have often wanted to take a class on just using spices because I too am lacking in the spice knowledge department! I have many spices but rarely use a variety outside of the basics.
